What You’ll Need
3–4 lbs beef short ribs
Salt + cracked black pepper
1 onion, diced
3 cloves garlic
2 carrots, chopped
1 bottle Guinness
2 cups beef broth
Fresh thyme
How to Make It
Sear ribs in a Dutch oven until deeply browned.
Remove ribs and sauté onion, garlic, and carrots.
Pour in Guinness and scrape up those browned bits (flavor gold).
Add broth and thyme.
Return ribs, cover, and bake at 325° for 2.5–3 hours.
Serve over creamy mashed potatoes and prepare for silence at the table — because everyone will be too busy eating.
Creamy Colcannon (Irish Mashed Potatoes with a Twist)
This is not basic mashed potatoes.
Colcannon blends buttery mashed potatoes with sautéed cabbage or kale for a rich, slightly sweet, incredibly comforting side dish.
What You’ll Need
3 lbs Yukon Gold potatoes
4 tbsp butter
1 cup heavy cream
2 cups finely chopped cabbage or kale
3 green onions
Salt to taste
Mash potatoes with butter and cream. Fold in sautéed greens and green onions. Make a well in the center and add more melted butter.

Irish Cream Chocolate Mousse (Silky & Grown-Up)
This is the one that feels like it came from a cozy pub or a restaurant in Roanoke with dim lighting and good company.
Ingredients
6 oz high-quality dark chocolate (60–70% cocoa), chopped
1 tbsp butter
2 large eggs, separated
2 tbsp sugar
¾ cup heavy whipping cream
2–3 tbsp Irish cream liqueur (like Baileys) OMIT IS MAKING KID FRIENDLY
Pinch of sea salt
Instructions
Melt chocolate and butter together over a double boiler (or gently in microwave in 20-second bursts). Stir until smooth. Let cool slightly.
Whisk egg yolks into the melted chocolate one at a time. Stir in Irish cream and sea salt.
In a separate bowl, beat egg whites until soft peaks form. Slowly add sugar and continue beating until glossy.
In another bowl, whip the heavy cream until soft peaks form.
Gently fold whipped cream into the chocolate mixture.
Fold in egg whites carefully to keep it light and airy.
Spoon into serving glasses and refrigerate at least 2 hours.
Top with:

A dollop of whipped cream
Light cocoa dusting
